What is the difference between single and double acting baking powders?


Both powders are leavening agents, meaning they make your baked goods rise. Single-acting powder is activated by moisture, meaning as soon as you mix your dry ingredients together with the wet the product begins to work; so bake immediately. Double-acting powders react in two stages. Some of the powder�s gas, the carbon dioxide that makes your baked goodies rise, is released when the powder is first combined with liquid. However, with double-acting powder, the majority of the gas is released after the baked good�s temperature rises in your oven.
