Dear Em:
I would love to make homemade guacamole but I’m intimated by slicing avocados! What do I look for in selecting one and how do I get into it?
Homemade guacamole is a must in the warm months! Avocados are easy to select and cut once you know the proper technique. When shopping for one, look for avocados that are firm but give slightly to gentle pressure. To get the meat out of the avocado: cut around the avocado lengthwise along the seed. Rotate the halves to separate them. Remove the seed by inserting the knife blade into the seed and giving it a twist to loosen it from the avocado. Peel the skin away from the avocado halves and slice into desired sizes. Remember: once exposed to air, avocados discolor quickly! Try to slice them immediately before serving or sprinkle with lemon juice to keep their color vibrant.
