Pimento Cheese Crisps
Ingredients:
1 French bread loaf, sliced into ½ inch slices
1 ½ lb. sharp cheddar cheese, grated
1 (8-ounce) package cream cheese, softened
¾ cup mayonnaise
2 (7-ounce) jars pimento, drained
Instructions:
Blend softened cream cheese and mayo together. Fold in cheddar cheese, pimento and salt and pepper to taste. Toast the bread slices until crisp-brown on edges and scoop teaspoon size servings onto each toast. Sprinkle tops with paprika for additional color.
*You can also refridgerate cheese mixture before toasting bread if you prefer your pimento cheese chilled before serving.
