Island Fruit Salsa

Ingredients:
½ cup diced mango
½ cup diced pineapple
½ cup diced papaya
½ cup diced tomato
1-2 jalapeno pepper, seeded and minced
½ cup red onion, finely diced
1 (15-ounce) can black beans, drained well
3 T. lime juice
1 T. chopped mint
Salt and pepper to taste

Instructions:
Toss together the mango, pineapple, papaya, jalapeno pepper, tomato and red onion in a bowl. Gently fold in the black beans and season to taste with salt and pepper. Sprinkle top with lime juice and fresh chopped mint. Pour in the lime juice and olive oil. Serve with tortilla chips for a yummy, fresh salsa or serve over Bibb lettuce leaves and cooked chicken for a healthy lunch!
