Fried Potato Cakes

Ingredients:
4 cups hash brown potatoes
2 eggs, beaten
½ cup onion, chopped
1/3 cups flour, plus additional for dusting
3 T. parsley
1 t. salt
½ t. garlic powder
½ t. pepper
¼ cup vegtable oil

Instructions:
Mix all ingredients together until combined. Shape hashbrowns into cakes and dust with additional flour. Fry in vegtable oil, 2-3 minutes per side until crispy. Drain on paper towels before serving.
