Curried Beef
Ingredients:
2 lbs. beef sirloin, cubed
2 T. vegetable oil
1 cup bell pepper, diced
1 cup onion, diced
1 t. minced garlic
2 T. butter
2 T. flour
1 ¼-1/2 cup beef broth
1 T. curry powder
1 t. parsley
Instructions:
Brown beef in oil over medium high heat until cooked through; remove & reserve. Add peppers, onions and minced garlic to skillet and cook until veggies are soft; 5-7 minutes, remove and add to reserved meat. Add the butter to the pan. Sprinkle the flour in and whisk in the beef broth, scraping up the browned bits from the bottom of the pan. Reduce the heat to medium and season sauce with curry powder and parsley. Return the meat and veggies to the pan and simmer in sauce until sauce is thick, adding more broth if it becomes too thick. Serve over hot, fluffy rice.
