Black-Eyed Pea Cornbread Cake
Ingredients:
2 ¼ cups cornmeal
½ cup flour
¼ cup sugar
1 t. baking powder
1¼ cups buttermilk
2 eggs, beaten
3 T. butter
½ cup onion, finely chopped
1 small can corn kernels, drained
1 (4-ounce) can green chiles, drained
1 (15-ounce) can black-eyed peas, drained
Instructions:
Preheat oven to 400 degrees. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder and salt. In another bowl, stir together the eggs, buttermilk, butter, onion, corn kernels, chiles and black-eyed peas. Add this mixture to the dry ingredients; stir gently until combined. Pour into a greased 9x13 baking dish and bake until golden, about 25-30 minutes. Let stand 15 minutes before cutting into squares.
