Baked Spicy Mac

Ingredients:
½ stick butter
1 cup onion, chopped
¼ cup flour
3 ½ cups milk
1 cup sour cream
1 T. Dijon mustard
1 (16-ounce) package Italian cheese blend, shredded
1 (8-ounce) package Mozzarella cheese, shredded
1 t. salt
¼ t. pepper
¼ t. (or to taste) red pepper flakes
2 cups macaroni noodles
1 cup Italian-style bread crumbs
2 T. butter, melted

Instructions:
Preheat oven to 350 degrees. Cook macaroni noodles in boiling, salted water until tender. Drain and reserve.

Saute onion in butter over medium-high heat. Cook until onions are tender, 5 minutes. Stir in flour and cook for 2 minutes; stirring frequently. Slowly add the milk, continue to stir. Cook until mixture has thickened, about 7 minutes more.

Remove from heat and stir in the sour cream and mustard. Fold in the 3 cheeses, salt, pepper, red pepper flakes and cooked noodles.

Spoon macaroni into a greased casserole dish. In a small bowl, combine bread crumbs with melted butter. Sprinkle the bread crumbs evenly over the macaroni and bake for 30-35 minutes, until hot and bubbly.
