Saucy Chinese Chicken Noodles

Ingredients:
1 T. sesame oil
¼ chili-garlic sauce
3 boneless chicken breasts cut into strips
1 lb. thin spaghetti
1 cup red bell pepper, cut into strips
1 cup onion, diced
1 (16-ounce) bag frozen broccoli florets
½ mushrooms, sliced
1 T. garlic paste
¼ cup soy sauce
1 T. corn starch

Instructions:

Heat oil and 2 T. chili-garlic sauce in a large skillet. Add the chicken and cook for 5-7 minutes; until cooked through, remove and reserve.

Bring a large pot of salted water to a boil and add pasta, cook through and drain.

Add broccoli, mushrooms, pepper, onion, garlic and remaining chili sauce to skillet. Cook veggies until crisp tender.

In a small bowl, mix corn starch with soy sauce and add to skillet. Stir until sauce thickens. Add chicken and pasta, tossing to coat. (If sauce becomes too thick, add additional soy sauce to pan).

*This meal is equally as tasty with rice instead of noodles.
