Mini- Bacon Meatloaves
Ingredients:
1 lb. ground beef
10 slices bacon, cooked and crumbled
¼ cup bell pepper, chopped
¼ cup onion, chopped
¼ cup milk
1 egg, beaten
½ cup breadcrumbs
¼ cup mayonnaise
1 T. Worcestershire sauce
1/3 cup ketchup, plus extra drizzle for top
2 T. mustard
½ t. salt
½ t. pepper
4 slices of white bread*
Instructions:
Preheat oven to 350 degrees. In a greased baking dish, place 4 slices of white bread on bottom. In a large bowl, combine beef with remaining ingredients, using your hands to mix thoroughly. Score the meat mixture into 4 sections. Form each of the four sections into a patty shape. Place each patty on top of a bread slice. Drizzle top with ketchup; bake 40-45 minutes; until no longer pink.
*The white bread will soak up the meat juices while cooking, making for a less-greasy meat loaf. Discard juiced bread slices after baking.
