Overstuffed Potato
Ingredients:
4-6 baking potatoes, washed
1 lb. ground beef
2 cups chopped onion
2 (16-ounce) cans stewed tomatoes
1 can whole kernel corn, drained
1 t. basil
½ t. salt
¼ t. pepper
Dash of hot sauce, to taste
½ cup sour cream
1 cup cheddar cheese
Instructions:
Prick potatoes with a fork and microwave individually on high until soft; about 6-8 minutes each. Cover with foil to keep warm until ready to serve.
Cook beef and onions in a large pot over medium-high heat until meat is browned and onions are translucent. Drain fat from pot. Add canned tomatoes, drained corn, basil, salt and pepper. Simmer for 10-15 minutes or until desired thickness. Stir in sour cream and cheese; remove from heat and combine until cheese is melted. Spoon mixture over tops of halved potatoes and wait for the compliments!
