Meatballs & Gravy on a Bed of Egg Noodles

Ingredients:
1 lb. ground turkey, chicken or beef
1 egg, beaten
¼-1/2 cup bread crumbs
1 can cream of mushroom soup
1 cup water
1 envelope turkey gravy mix
¼ cup onion, minced
¼ cup celery, finely chopped
¼ t. dried parsley
¼ t. pepper
¼ t. salt
¼ t. thyme
¼ t. garlic powder
1 bay leaf
¼ cup oil
1 (16-ounce) package egg noodles

Instructions:
In a large bowl, combine egg, breadcrumbs, onion, celery, parsley, pepper and garlic powder. Add ground turkey and mix well with hands. Shape meat mixture into 1 ½ inch balls. (Tip: add additional bread crumbs if mixture is not stiff enough to shape into balls). Brown in batches in oil in a large skillet over medium- high heat until meatballs are brown, but not fully cooked through. Drain the meatballs and set aside. 

In another bowl, combine soup, water, gravy mix, thyme and bay leaf. Return all browned meatballs to skillet and pour the gravy mixture over the meatballs. Return the skillet to boil over medium high heat. Cover and reduce heat to low and allow meatballs and gravy to simmer 10-15 minutes, or until meat is fully cooked thorough and sauce has thickened.

While gravy cooks, cook pasta in boiling water until al dente, about 5-7 minutes. Drain pasta and serve meatballs and gravy on top!
