5-Pound Peppermint Fudge
Ingredients:
4 cups sugar
1 (12-ounce) can evaporated milk
4 T. butter
3 cups semisweet chocolate chips
1 (8-ounce) container marshmallow cream
1 t. vanilla extract
½ t. peppermint extract
½ cup peppermint candy, crushed
½ cup walnuts, chopped, optional
Instructions:
Line a baking dish with aluminum foil. Bring milk, sugar and butter to a boil stirring constantly. Boil and stir constantly for 8 minutes. Remove from heat; add chocolate chips, vanilla and peppermint extracts and marshmallow cream. Stir for 1 minute more until marshmallows are melted into the chocolate. Pour fudge into foil-lined baking dish and garnish with crushed candy and/or walnuts, pressing into chocolate slightly. Cover top of fudge with additional foil and refrigerate until firm, 1-2 hours. Lift from pan; remove foil and cut into pieces to serve.
