Chicken Fritta
Ingredients:
2 t. oil
2 boneless, skinless chicken breasts, cubed
½ cup onion, chopped
½ cup bell pepper, chopped
1 cup broccoli florets, cooked
8 eggs
1 T. parsley
1 t. oregano
Hot sauce, to taste
1 t. salt
½ t. pepper
½ cup cheddar cheese, shredded
Instructions:
Heat t. oil in a large skillet over medium heat. Add the chicken and cook until no longer pink. Remove the chicken; reserve. Add additional oil if needed and saute onion and bell pepper until veggies are tender. Add the cooked broccoli and chicken.
In a large bowl, whisk the eggs, parsley, oregano, and hot sauce until incorporated. Pour the eggs over the vegetables and season with salt and pepper.
Sprinkle the cheeses on the surface and cover with a tight-fitting lid. Reduce the heat to the low.
Cook without disturbing the egg mixture until the eggs are set, about 5-7 minutes. Cut into wedges and serve.
