Apricot Chicken
Ingredients:
4 boneless, skinless chicken breasts
¼ cup apricot preserves
1 T. ketchup
½ t. cider vinegar
½ t. cayenne
½ t. thyme
½ t. pepper
½ t. salt
Instructions:
Preheat the oven to 375 degrees.
Season the chicken breasts with the thyme, salt and pepper. Arrange the chicken breasts on a greased casserole dish. Bake chicken 15 minutes. Combine preserves, ketchup, cider vinegar and cayenne in a small bowl. Brush chicken with glaze and continue to cook an additional 5-10 minutes; until no longer pink in the center. Serve with hot rice.
