Guacamole
Ingredients:
4-5 avocados
2 garlic cloves, minced
1 lime
1 (15-ounce) can Mexican-style diced tomatoes, drained
1 cup onion, diced
Salt and pepper to taste
2 T. chopped cilantro
1 jalapeno pepper, seeded and minced
Instructions:
Cut avocados in half, remove pit, and spoon avocado into a mixing bowl.
Add minced garlic and squeeze the juice from one-half of the lime into the bowl of avocado. Mash the avocado and garlic together to desired consistency using a potato masher Fold in diced tomato and onion, salt and pepper to taste, the minced pepper and chopped cilantro.Cover the bowl and refrigerate at least 1 hour prior to scooping with your favorite tortilla chips!
