Italian Cheesy Chicken Pockets
Ingredients:
4 boneless skinless chicken breasts
1 cup Italian-style bread crumbs
1/3 cup grated Parmesan cheese
2 t. salt
1 t. pepper
1 1/2 t. Italian seasoning
1 1/2 t. dried oregano
1 cup shredded mozzarella cheese
2 T. oil
Instructions:
Preheat oven to 400 degrees. Place chicken breasts between sheets of waxed paper and pound to 1/4-inch thickness, using a meat mallet or rolling pin. Season chicken generously with salt and pepper. Combine crumbs, Parmesan cheese, Italian seasoning and oregano in shallow dish.
Place ¼ cup mozzarella cheese at short end of each chicken breast. Roll up chicken, enclosing cheese. Brush chicken rolls with oil and carefully dip into bread crumb mixture, pressing crumbs to adhere. Arrange chicken rolls seam side down on greased casserole dish. Bake until cooked through, 18-20 minutes.
