Caribbean Chicken Salad
Ingredients:
1 cup mayonnaise
1 t. curry powder
½ t. salt
½ t. pepper
¼ cup fresh lime juice, from 2-3 squeezed limes
¼ cup coconut
4 cups cooked, diced chicken breasts
2 (13-ounce) cans pineapple chunks, drained and diced
1 cup diced celery
1 cup sliced almonds
½ cup raisins, optional
½ T. onion flakes
Instructions:
In a large bowl, combine all ingredients. Cover and chill at least 2 hours prior to serving, for flavors to marry. Serve as a sandwich, in a large tomato or on a bed of lettuce for a great spring salad!
