Warm Red Potato Salad

Ingredients:
4 pieces bacon
1 lb. red potatoes, unpeeled
¼ cup mayonnaise
1 cup onion, diced
½ cup celery
1 boiled egg, chopped
1 t. Dijon mustard
1 t. salt
½ t. pepper
¼ cup Parmesan cheese, for topping

Instructions:
Cook bacon until crispy. Drain and reserve 1 T. of grease. Place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender; about 15-17 minutes. Drain and cool potatoes. Dice cooled potatoes into bite-size pieces. In a bowl, mix together mustard, reserved bacon grease, salt, pepper diced egg, celery and onion. Toss potatoes in dressing and top with the crumbled bacon and Parmesan cheese.
