Picnic Carrot & Raisin Salad
Ingredients:
1 lb carrots, peeled
1 cup crushed pineapple, drained
1 cup raisins
1 cup mayonnaise
½ cup sugar
Instructions:
Shred carrots using a food processor or boxed grater. In a large bowl, combine the shredded carrots, raisins and pineapple. In a small bowl, mix the mayonnaise and sugar until well blended, pour over carrot mixture and toss lightly to coat.
Cover and refrigerate at least 2 hours prior to serving.
