Frito Pies
Ingredients:
2 slices bacon cut into 1” pieces
1 t. minced garlic
1 ½ cups chopped onion
1 pound ground chuck
1 t. salt
½ t. pepper
¼ t. cayenne pepper
3 T. chili powder
½ T. cumin
1 T. Worcestershire sauce
½ to one 6 oz can tomato paste
1 cup water
1 can drained red beans
For Pie:
Fritos corn chips
1 cup onion, chopped
2 cups cheddar cheese, shredded
Instructions:
In a large pot over medium-high heat, sauté bacon and onion until bacon is crisp. Remove and reserve bacon on paper towel to drain. Add beef and cook until browned. Add salt, chili powder, cumin, cayenne, Worcestershire, tomato paste, water and beans; simmer 15 minutes. Add crumbled bacon to sauce and stir to combine. Fill individual deep serving bowls with a layer of Frito chips. Top with a layer of chili mix, garnish with onions and cheese and repeat until bowl is full of yummy goodness!
