Momma's Corn Puddin'
Ingredients:
1 (8 ½ ounce) box Jiffy Corn Muffin mix
1 (16-ounce) can corn kernels, drained
1 (16-ounce) can cream corn
½ stick butter, melted
1 t. salt
½ t. pepper
1 cup sour cream
2 eggs
2 cups mozzarella cheese, shredded
Instructions:
Preheat oven to 350 degrees. In a medium bowl, mix all ingredients until combined. Pour into a greased casserole dish and bake 45-50 minutes, until center is set.
