"Be Mine" Berry Blondies
Ingredients:
1 stick butter
1 (12-ounce) package white chocolate morsels
2 large eggs
½ cup sugar
½ t. almond extract
1 cup flour
½ t. salt
½ cup raspberry preserves
½ cup coconut
½ cup sliced almonds
Instructions:
Preheat oven to 325 degrees.
Melt butter with 1 cup of chocolate morsels in a saucepan over medium heat. In a large bowl, beat eggs and sugar together until creamy. Stir in melted chocolate mix and almond extract. Gently stir in flour and salt until blended. Spread half of the batter onto a greased 8-inch pan. Bake 20 minutes; until lightly brown. Melt preserves in a saucepan until a spread able sauce forms, 2-3 minutes. Spread this evenly over the baked cookie layer. Stir together coconut, the remaining chocolate morsels and the remaining half of the cookie batter. Spread this over the preserve layer. Sprinkle top with almonds. Bake 25 minutes more until browned on top. Allow to cool completely before cutting into bars.
