Southwestern Corn Pups
Ingredients:
¾ cup yellow cornmeal
1 cup flour
1/3 cup sugar
1 T. baking powder
½ t. salt
½ t. pepper
1 t. chili powder
1 t. garlic powder
1 cup milk
1 egg, beaten
2 T. oil
½ cup Mexican style cheese, shredded
4 hot dogs cut in 1-inch pieces
Instructions:
Preheat oven to 400 degrees. In a large bowl, stir together cornmeal, flour, sugar, baking powder and seasonings. Stir in the milk, egg and oil just until blended. Gently stir in the cheese. Drop a small spoonful of batter into the bottom of a greased mini muffin cup. Place a hot dog piece on top and fill with additional batter to cover each hot dog. Bake for 10-12 minutes until muffins are browned. Serve warm with fiesta dipping sauce.
