Turkey Enchiladas
Ingredients:
1 1/2 lbs ground turkey (beef or chicken can be substituted)
1 can spinach, well drained
1 can black beans, drained
1 can red Enchilada sauce
1 (12-count) package flour tortillas
2 cups Mexican blend cheese
1 (8 oz.) cream cheese
1 t. cumin
½ t. salt
¼ t. pepper
Salsa, sour cream, olives, lettuce, tomato for garnish
Instructions:
Preheat oven to 350 degrees.
Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach, beans and half of Enchilada sauce to turkey. Sprinkle in cumin, salt and pepper; cook about 3 minutes until mixture has thickened. Remove from heat and add cream cheese. Mix until melted. Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased casserole dish with flat side up. Pour remaining Enchilada mix over and sprinkle cheese on top.Bake for 20 minutes until cheese has melted. Garnish each serving with salsa, sour cream, olives, lettuce and tomato. Ole!
