Baked Fish in Lemon Caper Sauce
Ingredients:
2 (2 1/2 lbs.) fresh white fish fillets, (recommended: flounder, tilapia, bass)
1 t. salt
½ t. pepper
1 (4 oz.)can sliced mushrooms, drained
4 T. butter, divided
3 tbsp. lemon juice
2 tbsp. capers, drained
1 t. parsley
1 t. Old Bay seasoning
Instructions:
Preheat oven to 400 F. Lightly grease a shallow baking pan or oven-proof serving dish.
Sprinkle fish fillets with salt and pepper. Place skin-side down in baking dish.
Melt 2 T. butter and pour over fish. Bake for 12-15 minutes, until fish flakes easily.
While fish cooks, prepare sauce. Melt remaining 2 T. butter in a saucepan. Add lemon juice, capers, mushrooms, parsley and Old Bay. Cook 3-5 minutes, until sauce thickens. Serve cooked fish on a bed of rice and pour caper sauce over.
