Jerky Pork and Potato Stir Fry
Ingredients:
¼ cup onion, chopped
¼ cup bell pepper, chopped
1 large sweet potato, peeled and cubed
1 apple, cubed
1 (12-ounce) pork tenderloin, sliced into strips
3 t. Jamaican Jerk seasoning
1 T. oil
1/3 cup apple juice
1½ cups cooked rice
Instructions:
Place sweet potato cubs in a shallow microwave-safe dish. Cover and microwave 4-5 minutes; until tender. Sprinkle sliced pork evenly with Jerk seasoning. In a large skillet, heat oil over medium-high heat. Cook pork with onion and pepper until pork is no longer pink. Stir in apple, sweet potato and apple juice. Bring to boil; reduce heat and simmer 2-3 minutes until sauce juice has thickened. Serve over hot, cooked rice.
