Orange-Glazed Chicken
Ingredients:
2 T. butter
4 boneless, skinless chicken breasts, diced
1 t. cornstarch
½ t. ground mustard
1 t. salt
½ t. pepper
1/4 cup orange juice
¼ cup orange marmalade
1/4 cup soy sauce
1 can sliced water chestnuts, drained
Instructions:
Melt butter in a large skillet over medium heat. Cook diced chicken in butter about 10 minutes, until cooked through; no longer pink. While chicken cooks, mix cornstarch, mustard, salt and pepper, orange juice, marmalade and soy sauce together in a small bowl. Pour this mixture over cooked chicken in skillet; bring to a boil, stirring constantly until glaze has thickened. Pour in water chestnuts and combine. Serve over hot, white rice!
