Caroling Cocoa

Ingredients:
4 cups milk
2/3 cup instant chocolate drink mix
1 candy cane, crushed
3 Andes mints, finely diced
1 ½ cups heavy whipping cream
¼ cup confectioner’s sugar
½ t. vanilla

Instructions:
In a large saucepan, combine milk and drink mix. Cook and stir over medium heat until heated through. Stir Andes mints into cocoa, until melted. Remove from heat and stir in ½ of crushed candy cane. In a mixing bowl, beat cream, sugar and vanilla until stiff peaks form. Pour cocoa into a mug and top with a dollop of cream and a sprinkle of the remaining crushed candy cane.
