When substituting fresh tomatoes for a canned product, what's the difference between the canned tomato options available?


There are many varieties of canned tomatoes available today. The most common types easily found in your local grocery are diced, crushed and whole. The main differences are in the variety of the tomatoes used, how they are processed and what seasonings are added to the final product. Most diced tomatoes are 3/4 inch dices. They are generally peeled and packed in their own juice. Crushed tomatoes have been peeled and broken down to a more concentrated form; they are also packed with their natural juices. Whole tomatoes are also peeled and packed in their own juice.
Tomatoes are heated to at least 170 degrees to kill bacteria and to be easily vacuum sealed. Once opened, canned tomato products should be stored in a container, covered, and refrigerated for up to 5 days.
1 (15-ounce) can of drained diced tomatoes = 2 cups of diced fresh tomatoes.
